Homemade Banana Bread

This recipe makes 2 loaves of delicious moist banana bread, perfect for the upcoming holidays.

Ingredients

1 1/2 cups sugar
1/2 cup oil
2 eggs, beaten
1 tsp vanilla
1/4 cup buttermilk
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup mashed bananas, approx 3 large
1/2 cup nuts, chopped (optional)
1/2 cup raisins (optional)


Preheat oven to 350°.  Begin mashing bananas in large mixing bowl.  


Add eggs, oil, vanilla and buttermilk and combine.


Then add dry ingredients and combine. 

 

Generously grease 2 loaf pans and fill each half full with batter.  


Bake at 350° for approx 45 minutes or until tooth pick comes out clean. 


Remove from oven and let rest approx 10 minutes, then turn out on wire rack to cool completely. 


This recipe can also be made into muffins.

Homemade Buttermilk Cornbread

If you like a cornbread that is NOT sweet, this is a great recipe for you to try.

Ingredients:

2 Tbs oil
1 cup buttermilk
1 egg
1/2 tsp baking soda
2 Tbs flour
1 cup yellow corn meal
1 tsp baking powder
1/4 tsp salt


First step, preheat oven to 450° and place a clean 12 cup regular muffin tin in oven to preheat. This makes for nice crisp muffin bottoms. 


Beat egg, then add oil and buttermilk and combine.


Next add dry ingredients and combine. 


Remove hot muffin tin from oven and generously grease with cooking spray.
Fill each spot 2/3 full.


Bake for approximately 20 min or until golden.



Remove from oven and immediately add butter!
Add your favorite honey, jam or jelly for a sweet treat!

Homemade Chili

This makes a quick and easy meal that can be made up ahead of time and either kept warm in the crock pot or stored in the freezer for later use.

Chili ingredients:

2 lbs of ground meat (beef, turkey, chicken, etc)
1 - 15.5 oz can of chili beans (can use black beans or kidney beans)
1 - 14.5 oz can chopped tomatoes (can use regular, petite diced, mexican, etc)
1 - 8 oz can tomato sauce
Chili powder to taste
Salt and pepper to taste


Brown and drain meat.


Add canned ingredients and spices.  Combine and heat through.  Allow to simmer for just a bit so the spices can do their thing. 



It's just that easy!

This chili is delicious by itself or on a frito pie or chili dog and is totally customizeable so make it your own.
